New Mexico Chiles and Ristra Making
Join Chuck Havlik from the New Mexico State University (NMSU) Chile Pepper Institute to learn about New Mexico Landrace chiles and the challenges many of them face including “Jemez Pueblo,” the most distinct New Mexico chile. After the talk, we will be making chile ristras and roasting chiles.
Chuck Halik is a doctoral student at NMSU and is working on the mechanical harvesting, de-stemming, and early maturation of landrace chile. He also works with Stephanie Walker at the Chile Pepper Institute.
